Whilst the eggs are boiling open and rain the tuna cans and put the contents in a bowl along with finely chopped dill and chopped capers. Add seasoning, lemon juice and a little mayonnaise and mix toroughly. When the timer has gone off, lift the eggs out of the pan and place in a bowl of cold water (add ice cubes if you have them). Peel the eggs when they have cooled down a little. put some of the tuna mix in your palm, place an egg on top and then add more tuna mix, encasing the gg in the tuna mix and squeezing gently a little as you do to get rid of any excess liquid from the tuna mix. When you have a covered ball shape, roll it in plain flour, then coat in beaten egg and finish by rolling in the panko breadcrumbs. Repeat this process for all of the boiled eggs. fill a wok or deep saucepan with oil till it's no more than half way full. Place on heat and leave to heat up. Check to see if the oil is ready by dipping the handle of a wooden spoon in the oil - if bubbles appear on the handle and start moving the oil is hot enough for frying, if not, wait a little longer and test again, Once the oil is hot enough carefully lower 2 eggs at a time into the hot oil using a spider or a slotted spoon. Cook for a few minutes till breadcrumbs turn golden brown and crispy, then repeat with other two eggs. Lift each pair of eggs out of oil when they are done and put on kitchen roll to absorb excess grease. Eat whilst still warm. They work really well with salad and a baked potato.
