Carmen Toledo is the Front of House Operations Manager and 1 of 4 Co-Owners of Toledo's Mexican Restaurant in Fresno, CA. Carmen's father, Sam Toledo, immigrated to the US in the 1970s from Mexico. He started working in restaurants and eventually helped open a Mexican restaurant that he helped quickly scale to 3 locations. When he was denied equity in that business, he left to open his own restaurant, Toledo's, in 1991. Carmen is Sam's second child and she began working at the family restaurant when she was 13. She left to work at Starbuck's and gain knowledge and experience from a large, efficient franchise and returned, along with her brother, to work full time in Toledo's around 2008. There are currently 2 Toledo's locations with a third location currently being built out. The Toledo's goal is 10 restaurants in 10 years.
