Tessum Weber, on Building upon Three Generations of Arctic Exploration

Chef Norbert, whose restaurants include the St. Hubertus at Aman-partnered Hotel Rosa Alpina, and AlpiNN a futuristic destination perched in the mountains.  Norbert's long held cooking values are now becoming current trends such as rediscovery of the local, respect for biodiversity, the spread of organic products and km 0, the mentality of slow living, the following of seasonality.  Norbert expands on the significance of these values and practices and is celebrating the release of his latest project, two volumes titled 'Cook the Mountain' consisting of a book of stunning mountain photography (perfect for display on your coffee table) and a book of recipes divided into the four seasons to reflect the concept of Cook the Mountain in the perfect way.
