Einkorn is growing in popularity, but is it really the oldest wheat mentioned in the Bible? In this episode, Annette sits down with grain expert Sue Becker to break down what einkorn is, how it compares to modern wheat, and whether it truly offers unique health benefits.
What Makes Einkorn Different
Einkorn is considered one of the most ancient varieties of wheat. Unlike modern "naked" wheat that separates easily from its husk, einkorn is a covered grain, which makes it harder to process and less common today. That extra work is one reason it fell out of popularity. Some people believe its older genetic structure makes it easier to digest, though it still contains gluten forming proteins.
Is Modern Wheat Really the Problem
Many claim modern wheat has changed dramatically over time. However, research comparing wheat seeds from over the past century shows little difference in gluten or protein content. The issue may not be the wheat itself, but how it is processed and consumed. Freshly milled whole grains offer better flavor, aroma, and nutrition compared to refined flour products.
How to Cook and Use Einkorn
Einkorn can be cooked whole just like rice. Use two parts liquid to one part grain, simmer until tender, and let it rest before fluffing. It works well as a side dish, in grain salads, porridge, muffins, pancakes, and even bread. While it has a pleasant flavor, it is often more expensive due to limited supply and processing challenges.
Choosing Whole Grains with Confidence
Whether you choose einkorn, spelt, emmer, or modern wheat, the focus should be on whole, properly prepared grains. Fresh milling, simple cooking methods, and returning to traditional food preparation can make a meaningful difference in digestion, taste, and overall health.
