Bobby Groves is an acclaimed oysterman, author and enthusiast. Born in Maldon, Essex, Bobby began working at his local oyster farm, Maldon Oysters, in the early 2000’s learning the art of oyster farming, preparation and serving, literally from the water to the plate.
He’s worked across the world as an oyster shucker for various restaurants, markets and oyster bars, shucking thousands of oysters per day. These days, as the Head of Oysters at London restaurant group Chiltern Firehouse he is one of the worlds leading authorities on this amazing bivalve.
