In this episode, Liam talks to Glen Wheeler, a chef and restauranteur – who owns and runs the “28 At The Hollow” restaurant in Enniskillen, Fermanagh. Glen was the first contestant from Northern Ireland to compete in the BBC’s Great British Menu competition for professional chefs – an experience he described as “a huge honour”.


Before opening his own restaurant, he worked at leading Michelin-starred restaurants across the world, including Gordon Ramsey’s “Royal Hospital Road” in London and a period as Head Chef at MacNean House, working under one of Ireland’s most respected chefs Neven Maguire.

Having grown-up in Enniskillen, Glen returned to his hometown to set up “28 At The Hollow” – which he runs with his wife Zara McHugh. In this wide-ranging discussion – first broadcast as part of “GB News Northern Ireland week” in November 2021 – Glen discusses how he grew up during “The Troubles” but is now hopeful and optimistic about Northern Ireland’s future.
